No. Restore only adds contacts that are missing and updates ones that changed. Contacts added after the backup stay. A fresh backup of your current contacts is always saved first, so you can undo a restore from History.

When the same person is saved in more than one account, for example iCloud and Gmail, the Contacts app links those cards and shows one contact. The app shows that same contact count, and mentions how many cards make them up.

Apple only lets apps read contact notes with a special permission that is rarely granted. Every other field is backed up. On Android, notes are included.

The cards might be the same person but the app is not sure, for example two people called only "Ashley", or a shared office number. Possible matches are never merged in bulk; review each one, then tap Merge or Not a duplicate.

Check that notifications are allowed for the app in your phone's Settings. In the app, Settings → Remind me to back up shows whether reminders are on and when they arrive.
